Wild fermented in a combo of stainless steel tanks and old, seasoned French oak barriques, the tank proportion ferment was stopped to conserve a splash of 6% residual sugar, and the wine that was in the barrels was left on its skins for a month before being fermented in the vineyard. Textural, and generously dry, it’s a complex sip. Juicy, nashi-centric, spicy, laced with sake and roaring with baked apple, it’s all a crazy mish-mash of techniques from a vineyard crew wanting to push the envelope.
