Not overtly peppery or muscular like what you’d expect from Gimblett Gravels syrah, instead it’s designed to also work well chilled. Yep – chilled! So if you’re lucky enough to have a warm sunny day then bung this in the fridge for half an hour and prepare for cheek-slappingly fresh, earthy, spicy, berry-driven deliciousness. Made by the legendary Jenny Dobson, it’s a mostly whole-berry ferment in stainless steel, pressed early to limit extraction in a basket press, gently aerated by racking regularly.
