Trinity Hill Prison Block Gimblett Gravels Cabernet Sauvignon 2020 $120
The way this wine looks as it pours into the glass was enough to elicit an awestruck “woof” from me. Inky, impenetrably dark and gorgeously glossy, it’s the colour of Queen of the Night tulips. It also hoists a payload of intensely pretty, Chocolate Cosmos florals, ripe blueberry, boysenberry and bay. Freshly rolled tobacco, white pepper and clay dust. The palate opens gates to an absolute fun park of flavour, rollercoasters of ripe fruit, and bumper boats of spice lead to a deliciously cocoa-crammed, lazy river of suede-like tannins. It’s a stunningly constructed wine that’s built for the long haul. Crafted from one of the greatest vintages of the century, it’s gorgeous now, but if you have the discipline, put some aside until 2040.
