Carrick Cairnmuir Terraces EBM Organic Central Otago Chardonnay 2019 $47
EBM stands for ‘extended barrel maturation’ and it’s the name given to a blend selected from barrels that have the greatest density and length of flavour, according to the directive set by Carrick’s original winemaker Steve Davies. The wine then gets extended time in barrel to balance out the youthful, primary fruit and add greater texture and integration to the final product. Current winemaker Rosie Menzies is very excited about this 2019 release and I can see why. Crafted from two handpicked, whole bunch pressed vineyard parcels, (clone 6 + mendoza) in 12 barrels (8% new) which spent a total of 19 months in oak, the result is a highly aromatic, grapefruit, baked nectarine -based wine boasting creme caramel, cinnamon toast and bouncy acidity. Delicious now but definitely cellar-worthy. Love it!
