Central Otago is like the masked singer when it comes to chardonnay – everyone wants to know who’s bringing the good stuff and yet it’s usually kept a precious secret by those in the chardonknow. The words ‘sur lie’ relate to the wine spending extra time in contact with its ‘lees’ which are the residual yeast cells leftover from fermentation. Time on lees ‘sur lie’ can inject extra creamy, nutty, complexity into the wine, and that’s exactly what’s occurred here. The lift of grapefruit pith, roast peach and apple, rub shoulders with cashew complexity, zesty acidity, toasty oak and a twang of tropical tautness on the finish.
