This alternative version of Howard and Julie Simmonds unique take on gewürztraminer has not had any sugar added after the secondary ferment and disgorgement and that’s created an ultra-dry, mineral-heavy style laced with ginger, citrus and has a delicately fine bead and a chalky texture (quite different to the other version of this wine that has had sugar added). Gewürztraminer skins are pinky grey and that’s what’s created the soft, pale apricot colour of the wine. It’s a non-conformist style that’s not for the faint-hearted.
