Waipara is Pegasus Bay’s home, but they’re fans of great fruit no matter where it comes from, so say hi to Central Otago! Vergence is all about pushing the oeno-envelope, so steady yourself for a 100% whole-cluster, carbonic and wild-fermented pinot. Think whole bunches sealed in an oxygen-free environment to ferment inside their own skins. Gentle foot-stomping releases the juice, alcoholic fermentation occurs, it’s then aged in oak for one year resulting in earthy, cherry-driven, tamarillo-tasticness, soft smoked berries and tantalising tannin textures.
‘Vergence’ is also the name given to when ones pupils look outwards in opposite directions before focusing. So there’s a bit of ophthalmology terminology for you.
