Who would have thought that a wine made from a Spanish grape grown in New Zealand would be the perfect partner for this classic French recipe. There’s something about the clean, crunchy apple, pear and lithe, lemony layers in the wine which work wonderfully with the sweetness of the caramelised onions, the salty, earthiness of the goats cheese, the nutty depth of the walnuts and the fantastically flaky buttery perfection of the pastry. It’s a refreshing, fabulously floral style.
