With lemongrass, nettles and soft, nutty notes cloaking the lime and lemon layers, it compliments the richness of the salmon sensationally.The wine is fermented using wild yeast, with 25% of the blend fermented and matured in old French oak barrels for 6 months. This adds a hint of funky, smoky complexity to the finish.
