Lime Rock Coquina Central Hawke’s Bay Sauvignon Blanc 2020 $38
Coquina is the geological term for the soft limestone comprised of cemented shell fragments of bi-vales and molluscs that characterize the base rock which runs deep across the Lime Rock vineyards. They’re located a few kms inland from the town of Waipawa, en route to Tikokino in South Central Hawke’s Bay. Winemaker Rosie Butler uses techniques like traditional foot-stomping, wild yeast ferments in seasoned, old, oak barrels, lees stirring, malolactic ferments and the like, to craft a sauvignon that bursts with wildflowers, lemongrass, soft jalapeno and creamy, slightly toasty notes, an edge of elderflower and lime zest. Every sip is a journey into how divine Sauvignon Blanc can be when skill and imagination are applied to exceptional quality fruit. Love it!
