This is the flagship sparkling wine in the Quartz Reef portfolio, only crafted when the fruit is absolutely perfect and the gods sprinkle fairy dust and fabulousness on the vintage. Produced from 100% certified organic and biodynamic chardonnay by winemaker Rudi Bauer and his expert team, it’s aged for 5 years on its yeast lees before being hand-disgorged, labelled, bunged into a gorgeous gold-flecked gift box and released to the market. I love the lift of lemony salinity on the nose, the peach and bagel-dough notes, it’s pillowy, marshmallow mousse and it’s lightness and dexterity as it does the moonwalk across your tongue. It’s superb.
