Cast your eyes past the slightly morbid pin-sticking pic on the label and get your nose stuck inside the glass instead, then you’ll be met with a whiff of lemongrass and white peach, white pepper and lime. Grown in a non-irrigated (dry-farmed) site in Watervale in the cooler climes of the Clare Valley, this is a lean, mineral-driven style with a snappy-dry texture. A touch of extra time on its yeast lees has added some creamy complexity to the mix and it has a long, prickly, green-tea touched finish.
