Pegasus Bay Vergence White MK1 NV $27
I love that on the back label they’ve stated “Wine made under this label will first and foremost be delicious…” and lo, it doth occurreth. This multi-vintage thing of beauty is mostly made of old vine Semillon, blended with Muscat, Riesling, Sauvignon Blanc, Gewürztraminer and Chardonnay and it’s all sorts of wow. Using a smorgasbord of techniques such as lees aging, skin contact, wild ferments, cultured ferments, ferments that are obsessive-compulsive or slightly on the spectrum and coming to grips with their sexuality – it’s a powerfully tasty beast indeed. Bursting with complex florals, vanilla blossom, honeysuckle, freshly-baled hay, citrus zest and marzipan on the nose and palate, texturally is where this wine really shines. Fresh, frisky acidity, softly prickly, grippy astringency and marathon-like length of smooth, rolling ripeness on the finish makes this wine an intensely concentrated, rewarding thing to drink and I absolutely love it.
