No question, the best possible thing to put in your mouth after these superb burgers, is the Unison Hawke’s Bay Pinot Gris 2019 ($24). It’s a dry-styled pinot gris with buckets of spice and a massive core of minerality in the mid-palate. You look at the label and assume it’s going to be sweet, however the opposite’s true. Seriously dry and lean, it shows subtle hints of nashi, pear and peach, yet it’s styled in a Euro-centric pinto grigio fashion. It’s awesome with onions of any description.
