While it might sound weird pairing a glass of red wine with a pizza loaded with greens, just bear with, because the Palliser Estate Martinborough Pinot Noir 2019 ($59) is just the most delicious thing with the layers of creamy mushroom, garlic and thyme in this pizza.

It’s a youthful and seriously savoury style that has a lot of years to knit together and morph into a different beast entirely. It’s showing strong tannin structure, buckets of dried herb, roast cherry and rhubarb layers now – so make sure you serve it in a large, swirlable glass to give it a whoomph of oxygen to smooth it out with every sip.
