Greystone Thomas Brothers’ Waipara Valley Pinot Noir 2018 $95 
This signature pinot noir, crafted by the multi-award-winning winemaker Dom Maxwell, comes from the highest elevation site on their limestone layered property. Hand-picked, hand-sorted and with a proportion of whole bunches in the wild ferment, it’s a wild and woolly, deliciously herbal and smoke-edged wine. That complexity is partly due to a long, sleepy, 15months in French oak barrels and Dom’s opted not to fine or filter the wine, ensuring he captures the true essence of the wine. Layered and spice-saturated, yet holding great poise and presence, it’s a very youthful wine that has a huge future ahead of it.
