Despite using a can of pale ale in the actual recipe, when it comes to eating these smoky, sticky beef cheeks, a glass of inky-dark Kererū Night Spirit Barrel-Aged Imperial Stout 2019 (500ml $33) is perfection. Aged in barrels that previously held single-malt whisky for 20yrs, each individually-numbered bottle (only 3762 were made) oozes caramelised spices, luxurious malt complexity and smoke-edged awesomeness. The giant green moth on the label is the New Zealand Puriri Moth, otherwise known as the ‘Night Spirit’.
