Pop this pinot noir-based rosé in the fridge immediately! Leave it for 40mins or so and then relish the raspberry, strawberry, cherry, indeed ‘every berry’ that’ll irrigate your olfactory passages. That slight chill accentuates the acidity and hints of savoury spice that pinot noir is famous for while injecting a layer of richness and fat fruit sweetness that gives it ‘friendly factor’. Ceres is the family project of Dicey brothers Matt and James. Matt’s the winemaker for Mt Difficulty, and James is the go-to guy for all things viticulture in Central Otago.
