I’m a sucker for bold, ballsy, aromatic white wines with any dishes where fresh ginger is the hero, which is why the shiny, new Pegasus Bay Waipara Valley Gewürztraminer 2017 ($30) perfectly shivers my timbers with this recipe. The fruit was infected with a fungus called botrytis, which gives the resulting wine a sweet, manuka honey and beeswax intensity on top of classic gewürztraminer layers of lychee, peach, honeysuckle and figgy fabulousness. Hints of toasty, flinty notes accentuate the exotic spices in the wine and the fry.
