Le Pas du Moine means “the path of the monk,” referencing the footpath leading to an ancient priory on the south-facing slope of Mount Sainte Victoire where Gassier’s grapes grow. The mountain’s known as the guardian of the spirits of Provence and defines the appellation’s northern boundary. Organically grown grenache, syrah and cinsault create the deliciously dry,soft berry, cherry and watermelon notes, while the crunchy acidity and minerality comes from a splash of white grapes ugni blanc and rolle.
