Prosciutto is my drug of choice. I can’t help myself when it’s around. If I see it on a platter I snaffle it, on hors d’oeuvres, get in my belly, and I’ll spend my last ten bucks on a packet of it from the supermarket and hoover it whilst driving home. However when it’s on a pizza, it needs a gloriously lush and plush pinot noir like the darn excellent Chard Farm The Tiger Central Otago Pinot Noir 2017 ($79) to cloak its saltiness and lift it skyward. Yes it’s pricey, but it’s slippery, silky, succulent and superbly sexy to sip. It is like a smooth, velvety ribbon running down your oesophagus – so so good.
