From 30-year-old organic, Mendoza-clone vines grown on their roots, this new vintage of their flagship Chardonnay is wild fermented and matured on lees in French oak for 18 months (EBM stands for extended barrel maturation) before being blended and bottled. But you don’t really need to know all that faff. All you really need to know is that this is a powerfully-structured, ridiculously elegant style laced with grilled grapefruit, vanilla-poached nectarines, buttery cinnamon toast and crushed cashews. Cleansing yet luxurious – its a stunning thing to sip.
