While there’s a seriously decent splash of merlot in the mix, the cabernet force is strong in this one. Delivering layers of lifted tobacco, dark cocoa, espresso, iron filings, and dusty carpenter’s workshop notes on the nose and palate, it’s roaring with toasty, smoky complexity. The tannins are emery-fine, contributing to its solid length of flavour, and give it a warming, woolly finish. Start stuffing that cannelloni with ricotta and spinach and bake it swimming in herby, garlicky tomato sauce. Drink now through 2028.
