One of the greatest food and wine combos to ever occur is that of this superlatively lovely Spanish soup and a sip or seven of Spain’s signature white wine, albariño. Happily, Clive Jones and his scarily talented team in have created a local example that’ll absolutely become the stuff of sabe legendario. The Nautilus Marlborough Albariño 2019 ($29) erupts with green apple, white nectarine, a lick of preserved lemon and some plucky white pepper notes on the nose and palate. Juicy and succulent to sip, it leaves a comet’s tail of tropicality on the finish.
